Grilled Chicken & Veggies

Last night we put lots of veggies (onions, peppers, zucchini, squash, green beans, mushrooms, etc.) And some chicken in a casserole with a little but of evoo, very little salt, pepper, and some garlic. We baked it at 375° for 45 minutes. The chicken was the pre-cooked, frozen kind which we very very rarely purchase. As Rachael Ray would say, yum-o!

Not sure what "evoo" is? Figure it's a typo, which I do often. So glad to see you using the oven more; and I really don't call this a casserole. "Casserole" has a calorie filled sauce to hold it together. WAY TO GO!!!!!
